At Three Dogs Gluten-Free Bakery they use blends of non-gluten containing flours, such as white, sweet and brown rice, potato, tapioca, soy, cornstarch, quinoa, amaranth, buckwheat and teff. The particular blend is customized for each baked good. For example, pie crust needs a blend different from that used for cakes.
Only gluten-free baking is done at Three Dogs Gluten-Free bakery. No gluten is allowed in the facility, not even in employees’ lunch bags. Anyone who does any baking knows that flour dust can travel in the air and settle elsewhere. This is why we do not make any gluten-containing products in our bakery.
