Chicken Stew

Gluten Free Chicken Stew

4 Large Chicken Breasts, Diced
One Large Onion, Diced
1 Tablespoon of Olive Oil
4 Tablespoons of Butter
1/2 Cup of Gluten Free Oat Flour
Gluten Free Chicken Stock
1 10 Ounce Package of Frozen Mixed Vegetables, Thawed
2 Potatoes, Diced
Salt and Pepper to Taste

Saute onion in olive oil until translucent. Add diced raw chicken to the onions and cook until chicken is just cooked. Add butter to frying pan and melt. Sprinkle mixture in frying pan with 1/2 cup of oat flour and cook for two more minutes. Add gluten free chicken stock to make gravy. Add mixed vegetables and diced potatoes. Add salt and pepper to taste.
Let this mixture simmer on the stove top until potatoes are tender.
