Gluten Free Honey Nut Granola
1/4 Cup Canola Oil
1/6 Cup Hot Water
1/3 Cup Organic Honey
1 Teaspoon Ground Cinnamon
1/2 Teaspoon Ground Ginger
1/4 Teaspoon Ground Nutmeg
1/4 Teaspoon Ground Allspice
3 cups Gluten Free Rolled Oats
1 1/8 Cup Chopped Pecans (or any other nut you prefer)
Preheat the oven to 325 degrees F.
In a medium bowl, whisk together the oil, hot water, spices and honey.
In a large bowl, stir together the oats and pecans. Pour the honey mixture into the oat mixture and stir until the oats and nuts are evenly coated. Spread out the granola onto 2 baking sheets lined with
Bake for 10 minutes, stir, and bake 10 more minutes. Keep baking and stirring every 5 minutes until the granola reaches the desired toasted golden brown color. Remove from oven and let cool on baking sheet to room temperature. Granola will harden as it cools. Break apart any extra large clumps, and store in an airtight container in the refrigerator.
You can stir 1 cup of dried fruit to this recipe as well. For example: Raisins – Dried Cranberries – Cherries – Apricots
Allow granola to cool completely before adding the dried fruit.
