New regulations for labeling Gluten Free Products



U.S. Gluten-Free Labeling Regulations

The new rules set the standard for labeling products if they contain more than 20 parts per million of gluten.



The labeling law assures consumers that all products labeled gluten-free will follow standard government guidelines. Food from manufacturers will be required to comply with the new regulation within one year.

Controlling gluten in your food is difficult

Celiacs can control the food supply in their own home by reading labels and being careful what they buy and eat. A simple thing like dipping in the butter a second time when buttering toast, can leave bread crumbs in the butter. This may be all it takes to trigger an autoimmune reaction. Some Celiacs remove all the gluten from their homes and everyone eats gluten free, it is easier and safer that way.

Controlling the food at home is difficult, but when eating out a Celiac has no control over what is in the food. If gluten free food is ordered and the cook contaminates it with flour during preparation, Celiacs will become ill.



Restaurants are starting to become more aware of the problems Celiacs face and many restaurants can prepare gluten free food. The problem for Celiacs is finding those restaurants that can serve them safely. Travel can be especially difficult when one is not familiar with the restaurants in the area. Finding a restaurant is a simple thing for most people, but for a Celiac it can be a time consuming and frustrating experience. When most people travel they find a restaurant that looks good and stop to eat. When a Celiac wants to find a restaurant they stop and ask if the restaurant can serve gluten free food. Often this question is met with a blank stare from the server, so moving on is the only choice. When a restaurant says they can serve gluten free food a Celiac needs to decide if in fact they can. Usually this is done through a series of questions, if the answers seem reliable the decision may be to stay for a meal. If the food is contaminated with gluten, the Celiac is the one who suffers not the restaurant employees.

PIP’S STORY

My daughter Olivia, who we nick-named Pippi when she was a little girl, was diagnosed with celiac disease when she was fourteen years old. Coming to grips with her new dietary restrictions was a challenge for Pip, but also for me as her mother.
As we learned together how to deal with her condition, I was inspired by her strength, determination and willingness to accept this new way of eating. I was determined that Olivia would not have to give up her favorites when it came to my baking. What ensued was a journey of discovery, as I learned to create wonderful recipes from gluten free ingredients. After just a short time on the new diet she commented to me, “Mom, do people really feel this good every day?” Success. Not only was she finally healthy and feeling well, she was doing so while continuing to enjoy her favorite baked treats. Eating gluten free is more than a diet – it is a way of life. Due to the risk of contamination, our entire house became a gluten free zone. With my new celiac-friendly recipes, Pip’s brothers. Drew and Bradley, didn’t know (or care) that all the baking in the house had become gluten free.
Olivia paid me a wonderful compliment before she left for college saying “with everything you baked for me, I have never felt deprived.” Pip’s Place is for Olivia and everyone like her with celiac disease or a gluten intolerance. You can safely enjoy homemade baking with confidence because there is no chance of cross contamination. At Pip’s Place, you can finally feel free to indulge again.

In addition to our colorful murals of Baltimore celebrities painted by MICA students, our tables are custom designed to resemble traditional farm tables. The tables are all made from reclaimed Brazilian Pine and the legs are made from pallet parts that originally came from the Federal Reserve.

In March of 2006 John and Mary, long time friends, were in Florida for a mutual friend’s wedding. The day after the wedding all the guests were invited to the bride and groom’s house for a barbecue. John, who has a passion for cooking, manned the grille all day. A year later, Mary, who has celiac disease, remembering John’s “love of food” approached him about joining forces to open a 100% gluten free restaurant. The work of adapting old family recipes to be gluten free started and on May 13, 2008 G. F. Cucina’s Italian Bistro opened its doors for business.
