Gluten Free Oatmeal Cookies
1 1/2 Cups Gluten Free Oat Flour
8 Tablespoons Unsalted Butter, Softened
1/2 Cup Gluten Free Old Fashioned Oats
3/4 Cup Light Brown Sugar
1 Teaspoon Vanilla Extract
2 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
NOTE: You can add one cup of raisins, chocolate chips, nuts – whatever
you like to this recipe. Fold in after you’ve add dry ingredients.
Preheat oven to 350F.
Cream butter and sugars together. Beat egg and vanilla into butter mixture. In a separate bowl, combine the flour, oats, powder, and soda by whisking together. Slowly add dry ingredients to sugar mixture.
Place cookies of your desired size onto cookie sheet (parchment lined for easy clean-up). Bake until no longer shiny on top. Time depends on the size of the cookies you make. Check after 10 minutes. Cool on cookie sheet for 5 minutes before transferring to cooling rack.
