Kickapoo Cookies – Gluten Free
1 c. margarine
½ c. white sugar
½ c. brown sugar
1 c. peanut butter
1¾ tsp. vanilla
1¾ tsp. soda
¾ tsp. salt
4 c. gluten free quick cooking rolled oats
2 c. chocolate chips (substitute 1 c. raisins)
1 c. walnuts
Cream together the margarine, sugars and peanut butter until light & creamy. Add the eggs and vanilla and mix well. Combine soda, salt and rolled oats in a separate bowl, then add to above and mix well. Mix in chocolate chips and nuts. Drop by teaspoon onto ungreased cookie sheet.
Bake @ 350°F. for 10 min. or until golden.
