Can Restaurants Serve Gluten Free Meals?

Many restaurants say that they can serve gluten free meals, but can they?
You don’t need to look very hard to find stories from Celiacs about gluten contamination in restaurant meals.  Why is this?
A restaurant that decides that it is going to serve gluten free meals needs to be serious about it.   If someone is putting flour in a meal and someone else is trying to make a gluten free dish beside it, chances are they’re not going to be successful.

Serving gluten free meals requires a separate area in the kitchen where there are no products containing gluten. EXTRA COST
The staff need to be properly trained to prepare and serve gluten free meals.  EXTRA COST
The products going into the food need to be gluten free, this means researching suppliers to make sure the products used in the restaurant’s food are gluten free.  EXTRA COST
Buying gluten free food is more expensive. EXTRA COST

So why would a restaurant want to serve gluten free meals when there is so much extra cost?

One answer is that the restaurants want to have more customers and therefore make more profit.  But that’s difficult when you see all the extra costs associated with serving gluten free meals.

Sometimes the answer is that a family member is a Celiac so they see the need and want to help.  Very admirable but often these restaurants can’t stay in business, it takes more than good intentions to run a profitable business.

The answer lies in the fact that many restaurants are willing to try to serve what their customers want and need, even if it is less profitable.  A business that tries to provide good customer service is often the one that earns their customer’s loyalty. A happy customer is one that comes back.  So even if the gluten free meal is unprofitable for the restaurant, people come back and bring their friends and family with them.  We need to appreciate the effort that a good restaurants is putting into serving a gluten free meal.
