New Day is the brainchild of Kelly Patrick, who was diagnosed with celiac disease five years ago. “It was a long road to my diagnosis,” explained Patrick, who suffered for seven years before being told by her doctors the nature of her disease.

When a gluten-free diet immediately made me better, it was a life-changing experience
she said. But while the change in diet brought Patrick better health, it also induced feelings of isolation and frustration for not being able to eat like the rest of her food-loving Italian family. “When I try to go out to eat, I must be the most tiring customer ever,” she said. “I wanted a place where I can go where nothing is off limits,” she explained.

ABOUT SHERRY LYNN’S

It took more than a decade for doctors to tie Sherry Lynn Birch’s migraines, stomach pains and weight loss to a celiac disease. She spent the next few years looking for good-tasting foods that fit her restricted diet. There weren’t many gluten-free products on the market, in 2002 and the restaurant scene was even worse. Frustrated by the limited food choices, she started making her own baked goods from rice flour.



In 2007, she and husband Howard Birch used their life savings to open Sherry Lynn’s Gluten Free Bakery, a cafe, take-out and roadside stand. A year later, the building they were leasing flooded and was condemned. That’s when the Birch’s expanded. They took a five-year lease on a vacant storefront at 836 Troy-Schenectady Road in Latham. On March 21, Sherry Lynn’s Gluten-Free Bakery and Cafe opened for business.

Gluten Not Included – GNI Bakery Store

When Deanna Smith learned that her cousin’s four-year-old daughter, Karlie, wouldn’t eat the gluten-free bread that was prescribed for her as a Celiac Disease (CD) sufferer, she wanted to do something to help. Even though Deanna had never baked a loaf of bread in her life—she has marketing background—she started experimenting with gluten-free bread recipes.



Deanna never expected her baking efforts to become a business; she just wanted Karlie to be able to eat peanut butter and jelly sandwiches like all the other kids could. Karlie did love Deanna’s original gluten-free bread, and it was so good that her playmates started eating it, too. Word-of-mouth started to spread about this great-tasting gluten-free bread.

Deanna responded to early calls asking about buying the bread by baking an extra loaf or two and giving it away. It didn’t take too long for her to realize that there was a tremendous demand for gluten-free bread that tasted good so the GNI Bakery was born.



It turned out that Karlie does not have CD, but she still eats Deanna’s bread. Her refusal to eat gluten-free bread that tasted like cardboard has been a boon to others who are unable to eat regular bread products.

I have always been a food addict. I just plain love food and everything about it. I actually thought I was pretty knowledgeable about the whole food thing until the time when my food world was turned upside down. I was diagnosed with Celiac disease. Little did I know this was going to be the start of a new challenge!
I quickly found out that I knew very little about something that is present in so many things we eat; gluten. Celiac disease is characterized by the inability to digest gluten. We must avoid all gluten in order to remain healthy. And this is where my quest began.
