ABOUT SHERRY LYNN’S

It took more than a decade for doctors to tie Sherry Lynn Birch’s migraines, stomach pains and weight loss to a celiac disease. She spent the next few years looking for good-tasting foods that fit her restricted diet. There weren’t many gluten-free products on the market, in 2002 and the restaurant scene was even worse. Frustrated by the limited food choices, she started making her own baked goods from rice flour.



In 2007, she and husband Howard Birch used their life savings to open Sherry Lynn’s Gluten Free Bakery, a cafe, take-out and roadside stand. A year later, the building they were leasing flooded and was condemned. That’s when the Birch’s expanded. They took a five-year lease on a vacant storefront at 836 Troy-Schenectady Road in Latham. On March 21, Sherry Lynn’s Gluten-Free Bakery and Cafe opened for business.

What is Gluten?

Gluten is a protein that is found in many grains like wheat, and barley. We eat products every day that contain gluten, bread, cereal, cake, pastry, cookies, pizza and pasta. But, what does gluten do?

When water and yeast are mixed with flour, the yeast starts to react. This reaction gives off carbon dioxide (CO2). When the carbon dioxide is released into the dough, the dough rises. If things go right, the dough rises and sticks together, making a great loaf of bread or cake or other baked product. Gluten is the glue that makes the dough stick together and gives the dough the elasticity needed, so it can stretch when it rises.



If you are baking with rice flour, or other flours that have no gluten, the results are different. When the yeast starts to react the CO2 goes into the dough. But since the rice flour has no gluten the dough doesn’t stick together, and the CO2 escapes. If the CO2 is not trapped in the dough, the dough doesn’t rise. The resulting baked product is hard and flat, and it crumbles when you eat it.

Celiac Specialties a dedicated gluten free facility

Michelle Fuller, often taught cooking classes. One day, a student asked if she would cook for a friend who had a toddler with an intolerance to wheat and gluten. She agreed and soon began cooking gluten-free meals and baked goods. She used special mixes from gluten-free food companies and also began developing her own recipes.

Before long she began taking orders from people and eventually opened the Celiac Specialties Bakery & Coffee House on June 3, 2003.



Fuller uses her own gluten-free baking base. She blends rice, potato starch, and tapioca starch along with ingredients such as xanthan gum and guar gum to improve texture and elasticity. She also developed her own special baking techniques to handle the gluten-free mixtures which behave very differently from wheat flour doughs and batters.

They also cater to the autistic community with a variety of gluten and casein free breads, donuts,dry mixes and other items.
